There's something so great about starting your day with a beautiful, healthy breakfast. Don't get me wrong - eggs benedict and waffles have their place, but fruit, yogurt and granola might just be my favourite week day go-to.
I whipped up a couple of batches of this Cranberry Cardamom + Coconut Granola and we have LOVED it. The warm spices give it beautiful flavour and it's loaded with coconut, almonds pecans and pumpkin seeds. You can use whatever nuts you like! Get creative with the dried fruits as well - dried cherries, blueberries or apricots would be delicious.
Just be sure when baking the granola not to let it get overdone. The nuts and sugars can go from caramel golden brown to slightly bitter and over done pretty quickly to keep an eye on it.
Store in an air tight container for up to 4-6 weeks. Serve with fresh fruit and yogurt for a delicious breakfast or anytime snack and be sure to let us know if you try it!

Cranberry, Cardamom + Coconut Granola
Serves 10-20 portions
Ingredients
2 cups old fashioned oats
1 cup unsweetened, shredded coconut
2 cups mixed nuts + seeds (sliced almonds, pecans, walnuts, pumpkin seeds, etc.)
3/4 teaspoon cardamom
1 teaspoon cinnamon
1/2 teaspoon sea salt
1 tablespoon brown sugar
1 tablespoon vanilla
1/3 cup real maple syrup
1/3 cup melted coconut oil
1/2 cup pitted dates, chopped
3/4 cup unsweetened dried cranberries
Directions
Preheat oven to 325 degrees Fahrenheit. Line large baking sheet with parchment paper or a non-stick baking mat.
In large bowl, combine oats, coconut, nuts and seeds, cinnamon, cardamom, salt, sugar and vanilla. Add in maple syrup and coconut oil and mix well to combine, ensuring everything is evenly coated.
Spread mixture across baking sheet evenly, pressing down slightly if you want bigger chunks in your granola.
Bake for 10 minutes, then gently toss with a fork. (Skip this step for chunky granola) Put back in oven and bake another 10-12 minutes until granola is golden brown and crunchy. (Don't over brown it!)
Allow to cool on baking sheet at least 10 minutes. Gently spoon into a bowl, breaking apart the sheets of granola into the size pieces you prefer. Add dates and cranberries and stir gently to combine.
