Summer fruit, is there anything better? The tomatoes are ripening on the vine, there's peaches in the fruit bowl and I can't even keep enough blueberries in the house for my two year old. It also means something else... watermelon. Not the mushy, orange coloured crap you get the rest of the year, but the bright pink and red, juicy and crisp watermelon you remember from childhood.
Other than just by the slice with a squeeze of lime, here's our favourite way to enjoy watermelon this time of year, my Watermelon Feta Salad with Blueberries + Basil.
This salad is super simple and combines the sweet fruits with salty, briny feta cheese, peppery arugula, vibrant red onion and syrupy Balsamic reduction. Be sure to put it together just before serving so everything stays cool and crisp.
Serve it alongside some grilled chicken or even on steak night to lighten things up. Prosecco pairs wonderfully!

Watermelon Feta Salad with Blueberries + Basil
Serves 4
Ingredients
5 cups fresh baby arugula or mixed greens
2.5 cups watermelon, cut into 1 inch cubes
1/2 cup fresh blueberries
1/4 cup thinly sliced red onion
1/3 cup good quality feta cheese
1/3 cup chopped fresh basil
Zest + juice of half a lime (about 1 tablespoon of juice)
1/4 cup Extra Virgin Olive Oil
3 tablespoons Balsamic reduction
Salt + Pepper to taste
Directions
On a large platter, spread out arugula and top with watermelon, blueberries, red onion, feta cheese and fresh basil.
Zest half of your lime over the top of the salad, then follow with the juice of half the lime squeezed over top. Drizzle with olive oil, season with salt + pepper and then finish with the balsamic reduction. Serve immediately and enjoy!
